Fermented Beverage Workshop

Try making your own delicious fruit enzyme juice by fermenting raw fruits with yeast and mineral-rich water.
It is easy to make!
All you need to do is shake the jar once a day!
In about 3 months, you can make up to 1 liter of fruit enzyme juice, along with plenty of raw jam (this method requires mineral-rich water).

Fermented Seasonings Workshop

Fermentation is the process by which microorganisms or enzymes break down organic matter.
In Japan, many fermented products like miso and natto have been made for centuries.
Many people think that it is hard to make, but it is actually very simple!
Including fermented products in your everyday life can improve the flavor of your meals while being gentle on your body, helping you lead a better lifestyle.
Shio Koji, Shoyu Koji, Onion Koji, Natto Koji, Kinzanji Miso, Fermented Dressings, Miso, Chickpea Miso, Okara Miso, Umeboshi, Hishio, etc. (Requests welcome!)

Kinzanji Miso Workshop

How about trying your hand at making Kinzanji miso? It is made with Kinzanji koji, plenty of vegetables, dried foods, and fermented seasonings. Handmade miso is even tastier because the ingredients concentrate a rich umami flavour. Be careful, you might get addicted!

Chickpea Miso Workshop

Chickpea Miso is the most popular item on Cafe Yuuki’s fermented lunch menu.
With a flavor different from soybean, it expands your culinary possibilities.
It is delicious on its own or as a Western-style dip.

Placed in a convenient resealable zip bag with a valve that makes it easy to take out, the miso is then left to ferment directly until ready to eat in about one month.

Chirimen Craft Workshop with nié

Beginners welcome! You will make a small raised cloth picture called ‘‘Oshie’’.

(About 2hours,¥3000, material and drink included).

Reservations are open for those who wish to follow a longer course. Please contact us for scheduling options.
